4 Inspiring Ways to Eat Vegetables

4 Top tips to make your vegetables taste amazing:

 

 When people think of clean eating, they think of bland salads and steamed veggies with no flavor and it’s all just so tasteless and boring. Eating your veggies is absolutely integral for good health and longevity so they MUST be eaten! I am here to tell you there are so many different ways to eat veggies that are healthy and just bursting with flavor!!!  For me, veggies are always the main thing on my plate, not the meat, so I have gotten really good at creating a bunch of deliciously different flavours with veggies. 

Let’s take a look.

 

1. Roasting

 

Try roasting or grilling veggies instead of just steaming them. Roasting keeps in all the flavour and allows you to add delicious seasonings to make them really flavorsome.  I love roasted veggies such as sweet potato, parsnip, and carrots seasoned with salt and pepper, rosemary, and garlic. You can add other spices such as cinnamon, turmeric, and/or chili and a dash of honey to really give your veggies a pop.

Here is one of my all-time favorites for a roasted sweet potato that has so much flavor. You can enjoy these in a salad, added to a burrito bowl, or as a delicious side to a fish or chicken meal.

** Roasted sweet potato (with a pop) (serves 6-8)

Ingredients

2 pounds (approx three large) sweet potatoes, peeled, (recommended) and cut into 1/2-inch pieces

2 tablespoons olive oil

3/4 teaspoon fine sea salt (kosher salt; use less if using table salt)

1/4 teaspoon freshly cracked pepper

1/2 teaspoon ground chili powder (optional)

1/2 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

1 tbsp honey

 

Method

Preheat the oven to 400 degrees F. Sprinkle olive oil onto parchment paper laid on a large sheet pan or a baking dish. Lay all the sweet potato on the tray.  Toss to coat all the sweet potatoes with the seasoning, honey, and olive oil and then spread out to arrange in an even layer so pieces are not overlapping.

Bake for 35 - 45 minutes.

 

2. Light seasoning

 

Light seasoning with lemon juice, salt, and pepper can make all the difference to plain sauteed veggies. If you’d like to increase the flavouring add a dash of seasonings such as vegetable seasoning, salt, and pepper.

If you are seasoning for a light stir fry then opt for a dash of gluten-free soy sauce, ginger, and garlic.

 

3. Fresh salads

 

Fresh salads are one of my favorite ways to eat my veggies, especially the leafy greens that are packed full of nutrition. There are so many ways you can accent your salads to give them different flavors.

Try adding some cranberries, nuts, or goat’s cheese to your salads for a sweeter taste. Or sun-dried tomatoes or olives for a stronger, richer taste with a Mediterranean flair.

 

4. Dips

 

One of the healthiest ways to eat your veggies is raw. But if you find this just too boring you can add some dip. We all love to dip, but instead of eating crackers or corn chips and dip, opt for chopped carrots, cucumber, and celery with dip. Avoid the creamy or processed cheesy dips with soybean oils and partially hydrogenated vegetable oils and opt for hummus, yogurt-based dips such as tzatziki or salsa. This is so simple and best enjoyed as a healthy snack.
